present your case, ask for a raise or commission that reflects that contribution. if they reject it, ask for a detailed breakdown of why? then you can choose to walk.
on face, seems like you’re attributing all the effort to yourself, and that may truly be the case. what you want to push for is transparency on where others are contributing that you main be unaware of, before jumping to the conclusion that they aren’t contributing as much as you are. (it may still be the case that you are proven correct, but that doesn’t help, where as, if you highlight this, others may be held to account)

your challenge is compounded due to the fact this is also a network effect problem (Andrew Chen – Cold start, google it for more info)
so IF you really want to go down this route, either pick a very specific niche (tattoo conventions for example) or be specific about the location (a specific city for example)
but basically, yeah you’re going in with a product that is very generic and is a bit ‘winner takes all’

really what matters is do you have a problem that you have a burning desire to solve; can you think of a way to solve it that would be profitable; do you have the skill and abilities to run such a business; can you accept the pressure beating your own path brings.

Document your brand name, get the domain name and related, but you can probably avoid actually registering the trademark for it, until you have a few commercially successful releases, that would financial justify this as a business for you.
as for your headline question – Is it a startup if only single person is working there? – it depends, if you want to follow thr strict venture capital definition of a startup what actually makes a startup is unit economics that allow for exponential growth.

No matter what decision you make, its the right one for right now. and if you find, later down the line, its not the right decision, you can always change it.
your initial startup success suggests you are very capable. maybe the question to consider isn’t so much ‘do i wanna grab that live wire again’, but more, whats the up-side? what would make it worth it.
having been from a family of entrepreneurs, and working in an accelerator where i advise a portfolio of 50+ companies, i can say that entrepreneurism really is something thats part of a persons persona, meaning that once they have that spark in them, no matter what they do, that spark shows, and for the most part it affected their ability to be good employees (especially mid/low level drones)
anyways, TL;DR, make a choice, commit to it, and find out, if it doesn’t work out, you can always switch, trust yourself and your abilities, and focus on the most interesting problems you enjoy solving.

if your business is reliant on tech software innovation, then i’d say a tech cofounder is essential, AI and low code are not effective alternatives at the time, and i think it would be naive to believe these technologies can replace an experienced tech cofounder at this state.
first theres domain expertise and credibility, next there management of the engineering workforce, followed by architecting the hardware and backend, then finally having a vision of the overall product and the engineering required. lastly technical compliance requirements eg. GDPR, user data privacy
so, your comment about not needing a tech cofounder, would be comparable to saying you don’t need any building experience to refurbish a property, depending on the complexity you’re kind of right, but for the kind of company that thrives off the back of venture capital, typically you expect millions of users globally, using the builder analogy, that would be like saying you dont need engineers to build a sky scraper because you can just google it.
next, Investors DONT want ownership dilution, dilution is a consequence of additional funding coming into the business, where typically investors dont what their share diluted, investors DONT want to take control, they are investors, not operators, but they do want influence, hence board seats.

11k isn’t impossible, work hard and save, if you’re a risk-taker, you can borrow that from a bank.
you dont need an investor for that kind of money, and most investors will not be interested in such a small amount.
you can try friends, family and fools – for fundraising.
